I always look on the web for meal ideas. Yesterday I received my produce box. I love it. I have everything from eggplants to zucchini!. Of course, at once I hit the web for some new recipes. I wanted to use the zucchini and sun choke in something new. I found this great recipe for an Italian Chicken Skllet Dinner. It calls for tomatoes, which in their fresh form, don’t sit well with me. I used the recipe as a template to create my own. What turned out was noteworthy. I decided to write my recipe-revamp of Italian Chicken Skillet Dinner on my blog, so I wouldn’t lose it! Italian Chicken Skillet Dinner (Modified)
3 chicken breasts 2 Garlic Cloves
1-2 Tbs Italian Seasoning 1 Medium Onion (Chopped)
2 Tbs Olive Oil 6 Medium Mushrooms
1 Tbs Butter 4 Tbs Pizza Sauce
Black Pepper (to Taste) 1 Zucchini
1. Cut the Chicken breasts into squares. Add 1 Tbs of Butter and 1Tbs of Olive oil and 1 Tbs of Italian Seasoning to the pan. Add half the garlic and black pepper to taste to the chicken. Cook the chicken until it begins to turn brown. Remove the chicken from the pan and put into to a bowl.
2. Add the second Tbs of olive oil and saute the onion until it begins to get tender (about 5 minutes). Then add the mushrooms, zucchini (and any veggies you like), rest of the garlic and Italian Seasoning.
3. After the mushrooms and veggies are sauteed, add the chicken to the skillet and 4 Tbs of Pizza sauce. Mix well and heat until the sauce and the chicken are warm.

Serve over Fettuccine noodles or the pasta of your choice and garnish with Parmesan and fresh chopped parsley.
